This spicy dish is a traditional hit of French cuisine. After all, the French have a cock in their national emblem. You do not have to go to France to enjoy the cock in red wine. You can prepare this meal yourself at home. You will be ready in less than an hour, then it is best to let the meat marinate one day or at least overnight. Stewing of meat itself depends on which recipe you choose.
How to do it
There are not many recipes for cock in wine. If you choose a typical French procedure, you will surely enjoy it. First, cut the cock and put the pieces of meat in the marinade. You can create marinade from red wine, carrots, onions, a bunch of herbs consisting of parsley leaves, bay leaves, thyme and garlic, pepper and salt. You leave the meat in this marinade overnight.
The next day, you remove the pieces of meat from the marinade and strain the marinade. Fry the meat lightly, add the vegetables from the marinade and sauté everything for about five minutes. Then dust it with flour and stir the flour until it is roasted. Add cognac and flambée. Then add the marinade and broth. This can be any, but the best is veal in this case. Cooking takes about two and a half hours with occasional stirring, adding cognac or wine and turning the pieces of meat.
While the sauce is cooking, you can dissolve the finely chopped bacon in a pan, frying salted and peppered sliced mushrooms. At the end of the boiling, add the roasted mushrooms to the sauce, boil everything for about five minutes and add salt and pepper to taste.
So roasted cock is usually served with boiled or roasted potatoes. You can also decorate your meal with parsley or chives to satisfy your vision.
Experienced chefs advise not to spare wine or cognac when preparing this great meal.
